Barcelona has had a freakishly warm October this year. The hordes of tourists have been never-ending, because the sunshine hasn’t stopped, even though you’d expect at least a hint of chill in the air this late in the year. And I’m definitely not complaining; I love the summer heat. But this week, autumn finally seemed to hit Barcelona. We had our first day of proper rain (and I mean, like, showers and showers and showers), which whisked the withered leaves down from the trees, and really gave off a proper autumn feeling.
When the weather starts getting colder and the days shorter (something I’m most familiar with from my Norwegian upbringing), there’s nothing better than warm, rich and spicy treats. These spicy protein bites are just that; little autumn candies with hints of both cinnamon and cayenne pepper that really do warm you up on a cold October or November day.
Ingredients (for 35 spicy protein bites)
100 grams or 3.5 oz. of almonds (raw)
100 grams or 3.5 oz. of chocolate protein powder (plant-based for vegans)
85 grams or 3 oz. of cocoa powder
45 grams or 1.6 oz. of shredded coconut
1 tablespoon of ground cinnamon
1 teaspoon-1 tablespoon of cayenne pepper (depending on how spicy you’d like the protein bites to be)
150 grams or 5.3 oz. of dates/prunes (pitted)
300 grams or 10.6 oz. of peanut butter (unsweetened)
4 tablespoons of coconut oil
Shredded coconut for coating
Grind the almonds to a fine consistency in a food processor. Set aside. Do the same with the dates/prunes, until you’ve got a fine paste. Set aside.
Mix ground almonds, chocolate protein powder, cocoa powder, shredded coconut, cinnamon and cayenne pepper in a bowl using a spoon. Add in the dates/prunes paste and peanut butter and use your hands to knead everything together.
Finally, melt the coconut oil and pour it into the base for the spicy protein bites. You may need slightly more oil than I’ve listed here. What you’re after is a workable dough that’s fairly easy to roll out.
Roll the base out into spicy protein bites using your hands and roll them in shredded coconut. Keep in an airtight container in the fridge until serving.
