I’ve mentioned this before, but I’m a complete sucker for bread. It’s in my blood – we can’t get enough of bread products in Norway. Combine it with another Scandinavian breakfast favourite, muesli, and you’ve got yourself a truly delicious treat. It’s also been ages since I’ve baked bread for the blog, so I really figured it was time to have a go at a completely different one. The great thing about this sugar-free muesli bread is that you can change it up however you like, using whichever muesli you’re craving. The prep time is minimal compared to most breads, and fresh out of the oven with some butter and jam, it’s absolute heaven.
570 grams or 1.25 lb. of water
25 grams or 0.9 oz. of fresh yeast
650 grams or 1.4 lb. of wholegrain flour
70 grams or 2.5 oz. of FiberFin
15 grams or 0.5 oz. of Tagatesse
15 grams or 0.5 oz. of honey
15 grams or 0.5 oz. of salt
200 grams or 7 oz. of sugar-free muesli of your choice
In the oven: 200° Celsius/400° Fahrenheit/Gas mark 6
This sugar-free muesli bread is made using the straight dough method, which is pretty much the easiest thing in bread making. If you have a dough hook and kitchen machine, then I suggest using these. If not, you can also knead the bread dough with your hands.
Dissolve the yeast in about 1/5 of the water, using a whisk. Add the wholegrain flour and FiberFin on top of this, followed by the remaining water, Tagatesse, honey, salt and sugar-free muesli.
Turn your kitchen machine on and mix for approximately 5 minutes at medium speed. If kneading with your hands then work the dough until it’s supple and smooth.
Place the muesli bread dough in a bowl, then cover it with plastic, and set it to rise to double size – this will take about 45 minutes to 1 hour.
Grease a large bread tin with butter and sprinkle some flour onto your work surface. Deflate the muesli bread dough and transfer it to your bread tin. Cover with plastic and set aside to rise again – about 30 minutes should do.

Glaze the muesli bread with some water, then place it into your oven. Remember to cut a couple of slits, or make a pattern, for the air to escape. Bake the bread for approximately 1 hour. It’s done when it sounds hollow when you give it a little knock.
Allow the sugar-free muesli bread to cool in its bread tin, then slice, toast and spread with your favourite jam, butter or both 🙂
