I’ve been seriously addicted to using berries in my recipes lately. They’re just so full of both colour and flavour. Add just a teeny tiny bit, and you’ve got a whole new recipe. In spring time, the weather can be incredibly mischievous, especially in Norway. You get snowy days, sunny days, rainy days, and days where you think summer is almost here. Then it’s perfect to combine the seasons in your desserts, too: balmy, crispy waffles and refreshing, juicy strawberries. These strawberry waffles are super yummy and easy to whip up for unexpected guests. Be sure to enjoy them out in the sun – if you can get some!
100 grams or 3.5 oz. of butter
160 grams or 5.6 oz. of strawberries
3 dl or 1.3 cup of whole milk
2 teaspoons baking powder
200 grams or 7 oz. of wheat flour
2 tablespoons of FiberFin
2 teaspoons vanilla essence
Melt the butter and set aside.
Chop the strawberries to an even sauce using a blender or food processor.
Mix eggs, milk, wheat flour, baking powder, FiberFin and vanilla essence together to a smooth batter using a hand mixer. Add in the melted butter and strawberries and mix again until you’ve got a thick strawberry waffles batter.
Fry the waffles in a waffle iron and be sure to use lots of butter.
Eat the strawberry waffles out in the sun with your favourite topping while they’re still warm. Yum 🙂
