Popsicles and sun go hand-in-hand. Summer is making a full-on approach here in Barcelona and I’ve taken my sandals out of their comfortable drawer as the temperature rises at top speed. These strawberry popsicles are super easy to make – except for an overnight wait you’ll have the recipe done in about 10 minutes. The popsicles can be enjoyed alone or at a birthday party, and are a perfect dessert for coeliacs and diabetics alike 🙂
400 grams or 14.1 oz. of strawberries
3 lemon wedges (juice)
30 grams or 1 oz. of FiberSirup Clear
1 dl or 0.4 cup of water
Remove the tops and cut the strawberries into cubes. Place strawberries, lemon juice, FiberSirup Clear and water into a blender, and blend to a uniform consistency (about 1 minute).
Pour the strawberry popsicles mixture into popsicle moulds and place in the freezer overnight.
Enjoy out in the sun 🙂
